HOMEMADE RANCH DRESSING.- So much better!

HOMEMADE RANCH DRESSING.- Once you've made this you'll never want the bottled kind again. Easy to make with fabulous results, you can actually taste the difference! You can use it as a dressing for salads or as a dip, use instead of ketchup with fries or chicken wings, raw veggies never had it so good and steamed vegetables really sparkle, great on fish or seafood, chicken or replace the mayo in your sandwich too!

You'll need the following:

1/2 cup Mayonnaise
1/2 cup Yogurt, plain
1/8 - 1/4 cup milk, you can use any kind you like
2 tsp Celery Leaves, fresh, chopped fine
1 Tbl Dill Leaves, fresh, chopped fine
1-2 Garlic Cloves, fresh, pressed
2 tsp Dijon Mustard, or any mustard, I like Tarragon or Champagne Mustard
1-2 tsp Lemon Juice
Salt and Pepper to taste

Place all ingredients except the milk in a bowl and whisk to combine really well. Gauge the texture, if it's too thick and you'd like it looser then add a teaspoon of milk, whisk again and check. If you like it thick then leave as is or add as much milk as you need to get the consistency you like best.

Refrigerate at least 30 - 60 minutes for the best flavor at least.

Feel free to add extra herbs, finely chopped red onion or other veggies. I love to use this Ranch Dressing when I make the "Pea and Bacon Salad" (recipe is on this blog, use the name on the Search feature). Once you make this dressing you'll start seeing all the other dishes you can use it on, you'll see. This became our "go to" Ranch Dressing and we've never bought the bottled dressing in years!

NOTE: You can also add flavors to the Ranch Dressing, same ones you've seen out in the supermarkets. Add some Chipotle liquid (buy a small can and drizzle a little of the liquid then mix), you can make "Cilantro Lime" by adding finely chopped Cilantro leaves, 2 or more Tbl of Lime Juice, 1/2 tsp of Worcestershire Sauce. You can replicate any of the flavors you can buy at the store, just see what the ingredients are and add those to the basic recipe, like bacon bits and a little of the bacon drippings, if you want a little sweetness you can add some ketchup or some spice with Chipotle or any Salsa. Buttermilk tang, then add 1-2 Tbl of white vinegar to 1/2-1 cup milk, mix and wait about 10-15 minutes and use this instead of the yogurt (this makes a "mock buttermilk" which is great to make when you need it in a pinch).
