GARLIC LEMON CHICKEN.- A very easy dish to prepare with wonderful flavor....

This quick and easy dish to serve your family will become a favorite for you. Economical and without a lot of fuss, I'm sure you'll really like it.

To prepare this you will need:

GARLIC LEMON CHICKEN.-

1 cup flour
Kosher Salt
Black Pepper, fresh ground
1-2 tsp Oregano, dry- crumbled or ground
1-2 lbs Chicken: breasts, thighs, legs, your choice
2-3 Tblsp Oil, your choice
1 cup Chicken Broth
1/2 stick of butter
2-5 Garlic Cloves, finely minced (depends on how much garlic flavor you like)
Juice of 2 lemons
1/4 cup Dry White Wine
1 lemon, finely sliced in rounds

In a dish, place the flour and add the salt, black pepper and oregano. Mix well. Add chicken and cover really well, then place in a dish and allow to rest for at least 15 min.

In a large skillet, add the oil and begin cooking the chicken- do not crowd the pan. Using medium-high heat. If you are using chicken with skin on, place skin side down to cook. Allow at least 6 min per side, turn and cook more time. Make batches if needed, place cooked chicken on plate while the rest are cooking, Salt and pepper the chicken as it comes out of the pan and let chicken rest.

Once all the chicken pieces are cooked and resting, add the chicken broth, butter, garlic, lemon juice and white wine, season with salt and pepper and bring to a boil and then lower the heat to a simmer and add the lemon slices. Return the chicken pieces to the pan, either toss or pour sauce over the chicken and allow to simmer in the sauce for about 15 minutes. This will allow for the sauce to come together, thicken and get the dish ready.

Serve the chicken with sauce, over pasta, with mashed potatoes or with your choice of side dish.
