Polvorones or Mexican Wedding Cookies.- These are very simple little cookies, don't know why they're called Wedding Cookies since I haven't seen them in weddings but this aside, they are worth making and making often. I'm sure your family will love them. Just take care in case anyone has a nut allergy, they are made with Pecans (or Almonds, Walnuts, etc)
Another positive thing about this quick recipe, very simple and few ingredients and it's all done in a food processor!
Let me tell you what you need to make these:
INGREDIENTS.-
1/2 cup Pecans, I use Pecan Halves
2 1/2 cup Confectioners Sugar
Pinch of Salt
1 cup (227 g) butter, cut in tablespoon cubes, cold
1/2 tsp Vanilla
1 3/4 cup All Purpose Flour
Get your food processor ready. Add the Pecans and 1 cup of the sugar plus the pinch of salt and process until everything is ground fine. While the food processor is running add the butter, one by one piece, until you have a smooth mix. Add the vanilla. Add the flour, using the pulse feature until you have your dough ready and evenly mixed.
Scrape the dough into a bowl and cover with plastic film. Put in refrigerator for 30 minutes. In the meantime you can pre-heat the oven at 350 F so it's ready.
You can use a tablespoon scoop to make 1 inch balls, rolled between your flour dusted palms if you need, and place them in an ungreased cookie sheet about 1.5 inches apart. Now there is no rule that says they must be made into balls, use whatever shape you want and use whatever nut your prefer, ok?
Bake about 15 minutes or until just beginning to brown. Cool for 2 minutes and then pick them up with a small spatula and drop into a bowl with the rest of the confectioners sugar, roll them and cover them well. Serve.
To save the cookies, place in an airtight receptacle but mine never survive the evening so have never had to store them! 😁
I have heard many countries have similar cookies, ours were brought to us by the Arabs that lived in Mexico for over 300 years and were another gift from them. This is a very old cookie recipe too.
