Stir Fried Shrimp in Gochujang Glaze.... Spicy Hot!!!!

You might not be familiar with Gochujang Chili Paste but if you like spicy complex flavors you should really become familiar with it, you can find it in any Asian Market, comes as a paste which you can fry lightly in some oil, add some liquid and turn it into a sauce. To this you can add sweetness or acid to complement the flavors but above all taste, taste, taste until it pleases you. Make it in advance so you have all your ingredients ready since a stir-fry is a very fast preparation dish.

Today, I added green onions and broccoli florets all in small pieces, plus I had some finely chopped cilantro leaves ready as a finishing topping. The shrimp were clean, de-veined and good size.

This is the Gochujang Paste:   

Here are the ingredients:

2 lbs shrimp (I had 21-24)
1/2 a yellow onion, cut in medium dice
4 green onions cut small
2 large broccoli stalks, florets separated and then cut in half or fourths to make bite size
2 tbl cilantro leaves cut fine
2 tbl Gochujang paste
Olive oil
1/2 to 1 cup water
1 tbl corn starch in 1/3 cup water

Put some oil in a small pan and heat, add the chili paste and get hot. Add the 1/2 cup of water and with a whisk make sure it all dissolves. You can add more water until fully liquid. If you want to add sweetness (honey, sugar, etc.) or acid (rice wine vinegar, lemon juice, vinegar) and stir in well. Keep whisking until it's well incorporated, set aside. Add the corn starch to the 1/3 cup water and stir well. Set aside.

In large pan, heat 2 tbl oil until hot, add the onion and broccoli and stir fry 2-3 min, add the shrimp and stir fry until they lose the pink (about 2-3 minutes) and then add the chili sauce. Stir well to cover all the ingredients and once it's boiling, add the corn starch liquid and stir it all well so the liquid becomes thick and a glaze consistency. Top with the cilantro and serve!



You can use chicken, fish or all veggie depending on your needs, just adjust the cooking time or pre-cook so you can quickly stir fry. You can also change the vegetables to anything you have on hand, it all works!  Enjoy!
