CAULIFLOWER PIZZA..... YOU GAME?

Cutting carbs, gluten or grains? Trying to lose weight or eat healthier? Want a lighter load on your system? Here is something then you have to try..... it has endless variations depending on your personal taste, different sauces, toppings, cheese or not, you name it you can do it, the only limit is your imagination so let is loose and go for it..........

CAULIFLOWER PIZZA....

2 1/2 cups grated cauliflower (a whole head)
1 egg, beaten
1 1/2 cups shredded cheese (Mozzarella, Skimmed Milk Cheese, Vegan, etc)
2-3 Tbl Parmesan Cheese
Salt and pepper to taste
1/4 to 1/2 cup tomato sauce (or Tomatillo, Chipotle or whatever you choose)
1/2 to 1 cup grape tomatoes, cut in halves
3-4 cloves of garlic, sliced thin or minced or from garlic press
1/4 to 1/2 red pepper flakes
Basil leaves, sliced very thin

Heat your oven to 425F. Line a baking sheet with parchment paper.

Grate the cauliflower with a food processor or box grater until you have the 2 1/2 cups, put in a
bowl and microwave on high for about 6-8 minutes or until soft. Set aside to cool.

Once the cauliflower is cooled, mix in the egg, one cup of the mozzarella, Parmesan cheese, salt and pepper into the crumbles until well combined and make a 10 inch round on the baking sheet. Pat down so it's even. Spray lightly with natural non-stick olive spray and bake for about 10-15 minutes or until golden brown.

Top the pizza with your chosen sauce, the rest of the Mozzarella, the tomatoes, garlic and red pepper flakes.  Return to the oven for another 10 minutes or until done and bubbly. Top with the thin slices of Basil leaves.  Enjoy!
