Fish Tacos - Are a memory of Ensenada for me, since I was very young I love them!... A simple and healthy dish now prepared all over Mexico, when we lived in Vallarta we had a favorite stand for these and we would look forward to having our "street tacos", of course there are many types of street tacos, and don't get me wrong they're all fabulous!
A dish that is wonderfully satisfying no matter what type of fish you choose, from shrimp to tilapia, Huachinango or Tuna, they come together for an amazing bite every time!
Fresh fish encased in a light, crunchy beer batter then topped with a lemon cabbage slaw, along with fresh Pico de Gallo, cilantro, avocado and an amazing Salsa, what more could you ask for? The code word here is "fresh", fresh fish, fresh veggies and naturally an amazing Salsa!
If you want to make these here are the ingredients you'll need:
500 g fresh fish, your choice
1/4 cup cornstarch
Oil for frying
Your favorite Salsa or sauce
Cilantro
Avocado
Pico de Gallo, fresh
Cabbage, with lemon juice, salt & pepper, let rest a little while
Persian Lemons
Corn tortillas, preferably fresh
For the Batter:
150 g (5 oz) All purpose flour
50 g (1.7 ox) Cornstarch
1/2 tsp Baking Powder
1 tsp Salt
320 ml (10.8 oz) Cold beer, your choice
Mayo Topping: Optional
1/3 cup Mayonnaise
2 Tbsp Lime Juice, fresh
1/2 tsp Salt
Directions:
1- Place all the dry batter ingredients in a bowl and mix together. Mix the Mayo and make the Pico de Gallo
2- Put the Cornstarch for the fish in a separate plate to have ready.
3- Once you're ready to serve and you've got all the other parts of the recipe ready, this is important since it comes together fast and it's best eaten hot...
4- Put your oil into a deep pan over high heat and wait until the oil is hot enough to fry.
5- While you're waiting for the oil, take the bowl with the batter ingredients and add the beer while whisking well. Take the fish and cover it well with the Cornstarch, be sure to shake off any excess.
6- Dip the fish into the now liquid batter, don't leave it too thick, and place it gently into the oil and let it fry until golden and crispy, about 2-3 minutes. Place on a paper towel and sprinkle some salt right away.
7- Once you're ready to serve, place some cabbage on a tortilla, then the fish, then avocado, Pico de Gallo, Cilantro and any Salsa you'd like to add. Serve with lemon.
Now you see that this is a simple dish to prepare but it's an amazing meal that people love! So go ahead and make this for your family today, they will be happy...
